Fennel seeds are sun dried seeds and one of the oldest herbs, characterised by a fresh anise flavour and prized for its qualities to aid digestion.

Suggested Uses

It pairs vegetables well and is especially useful in cooking oily fish.

Its anise flavour accents pork dishes and used in cookery and sweet desserts.

Add near the end of cooking.

Whole spices retain better flavour than ground.

Store in the closed ziplock bag until needed and grind using a coffee grinder or mortar and pestle.

The Variety

Fennel is the leaf of Foeniculum vulgare, in the same family as carrot, coriander, celery, caraway & parsley. Native to the shores of the Mediterranean.
