Divide the coconut into 2 bowls and stir a few drops of food colouring into each so that you end up with red coconut and green coconut.
In a pot, melt the butter, brown sugar, honey, ginger and mixed spice. Bring to the boil for 3-5 minutes depending on how soft you want the slice to be.
